Cream cheese jalapeno roll ups for Thanksgiving feasts!
I LOVE the holidays. Thanksgiving and Christmas are just magical for me and my family. It's the 2 times a year that we all get together and can just forget all the craziness ( and believe me there is some SERIOUS craziness going on this year), relax and enjoy each other's company.
Now, I'm not a small girl. I mean I'm tiny if you're going by height (4"11") but this girl loves to eat! Our whole family does. So that being said we FEAST on Thanksgiving. Everyone pulls out all the stops. Grandma makes her delicious stuffing, Mom makes a pumpkin and a pecan pie along with her TO DIE FOR potato salad (seriously, it's the only thing I ask for on my birthday), my aunt makes the turkey, my brother brings the ham and my sister in law brings an amazing sweet potato dish. What do I bring? The green bean casserole of course! and recently I've been in charge of the ever popular and yummy cream cheese and jalapeno roll ups! Is your mouth watering, because mine is!
I can never find the EXACT recipe for the roll ups when I need it so today I'm going to tell you my recipe and next year you can remind me where I put it ok? Ok!
Ingredients:
1 8 oz package of cream cheese
1 8 oz container of sour cream
1/2 of a 4 oz can of chopped black olives
1/2 of a 4 oz can of chopped jalapenos
1 package of Tortillas (any size)
Salt & Pepper
Finely dice black olives & jalapenos in separate bowls.
Mix together cream cheese and sour cream.
Add black olives.
Add jalapenos - WAIT!!! - how much you add will determine just how spicy these things are. Add a bit then taste your mixture or you WILL end up with these being way too spicy.
Add salt & pepper to taste if needed.
spread about a tablespoon of mixture (give or take) onto tortilla and roll it up tightly. (I put a piece of wax paper around each roll).
Repeat until all of your mixture is used.
Place into refrigerator over night. (this is the worst part..... I HATE waiting....)
..... still waiting ......
(THE NEXT DAY) ..... FINALLY!
Remove wax paper (if you rolled them up in wax paper) and slice your roll ups.
